There’s something so magical about Microgreens. They’re tiny and delicate but a giant when it comes to nutrition. You guys know that I love greens! But have you heard of Microgreens? These little miracles are loaded with healing benefits and I am beyond infatuated. Not only are they nutrient dense but they taste delish as well. They truly have superpowers! 

what are microgreens you ask?

Microgreens are vegetable greens that are harvested within the first couple of weeks specifically after leaves have formed. Because of their early harvest they are 20-40 times more nutrient dense then their adult vegetable form. That makes microgreens the “Rocky Balboa” of all greens.

When it comes to Microgreens, there are many to choose from. Stores like Whole Foods, Sprouts & locally owned markets will carry them. Here are some great options:

  • Watercress
  • Broccoli 
  • Beet
  • Spinach
  • Radish
  • Fennel
  • Peas

Just like other greens, microgreens are jam packed with healing properties & benefits such as:

  • Polyphenols
  • Anti-inflammatory
  • Improves heart health 
  • Aids in digestion
  • Packed with enzymes
  • Rich in Chlorophyl 
  • High in essential minerals
  • Antioxidants

Growing your own microgreens

At the end of the day, I’m no farmer, but I promise you that anyone can grow microgreens. It’s easy to grow them right in your own kitchen or an area that receives sunlight. Here’s what you’ll need:

You can also use Microgreen starter kits and grow lights if you are not able to grow near a window or direct sunlight.

I’m finding more and more that microgreens can be used in many ways. I love adding them to any salad or putting them in a smoothie. One of my favorites is adding them to avocado toast. Recently we added them to our stir fry as a garnish when plating. I don’t care how you play it, you can’t go wrong with microgreens.
