There’s something so magical about Microgreens. They’re tiny and delicate but a giant when it comes to nutrition. You guys know that I love greens! But have you heard of Microgreens? These little miracles are loaded with healing benefits and I am beyond infatuated. Not only are they nutrient dense but they taste delish as well. They truly have superpowers!

Microgreens are vegetable greens that are harvested within the first couple of weeks specifically after leaves have formed. Because of their early harvest they are 20-40 times more nutrient dense then their adult vegetable form. That makes microgreens the “Rocky Balboa” of all greens.

how to eat microgreens
I’m finding more and more that microgreens can be used in many ways. I love adding them to any salad or putting them in a smoothie. One of my favorites is adding them to avocado toast. Recently we added them to our stir fry as a garnish when plating. I don’t care how you play it, you can’t go wrong with microgreens.
